So I thought it was time to give it a try -- and "health it up" a bit. Oh my -- amazingly delicious chicken!
It was super-easy to prepare, and it came out perfectly! Tons of delicious flavor in this chicken and the Parmesan cheese makes it amazing! Loved it.
21 Day Fix - Baked Greek Yogurt Chicken |
BAKED GREEK YOGURT CHICKEN
Ingredients:
- 4 small chicken breasts (skinless and boneless)
- 1 cup plain Greek yogurt
- 1/2 cup Parmesan cheese
- 1 tsp. dried parsley
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/2 tsp. red pepper flakes
- Salt and pepper, to taste
Preheat oven to 350 degrees.
In a bowl, combine all ingredients except for the chicken breasts.
Place the chicken in a baking dish, coated with nonstick cooking spray. Using a kitchen brush (a spoon will work too), brush the Greek yogurt mixture over the chicken.
Bake for 25-30 minutes or until cooked through (depending on the thickness of your chicken breasts).
Enjoy!
(21 Day Fixers, each of 4 servings counts as: 1-1/4 red, and 1/2 a blue.)
If you give this recipe a try, please let me know! I would love to hear how it went!
ALL THE BEST,
Just made this tonight; so good! My husband even hates yogurt, but i'm currently making 6 more pieces for the rest of the week, per his request. :-)
ReplyDeleteI'm so glad that you both enjoyed it! Thank you!
Deletedo you use grated or fresh parm?
ReplyDeleteI generally use fresh Parmesan. Enjoy!
DeleteSO delicious! Made it two weeks ago and about to put it in the oven for tonight!!! Thank you for the recipe!
ReplyDeleteSo glad you enjoyed it! Thank you!
ReplyDeleteHave you tried marinading the chicken in this mixture the night before?
ReplyDeleteI have not -- but let me know if you do!
DeleteDo you think frozen chicken would work? I imagine you'd just up the cook time?
ReplyDeleteI made this last week and am having it again tonight. I was wondering I you cover the chicken or not?
ReplyDeleteSo good! I added fresh lemon juice from half a lemon. I also used 1/4 fresh parm & 1/4 grated parm cheese. I cut my chicken breasts in half because they were thick but it still took close to double the cooking time, an hour. I think covering it next time would help it cook faster.
ReplyDeleteSo glad you enjoyed it!
DeleteOMG!! This was so delicious....even my picky 8 year old liked it. Thanks for the recipe!!
ReplyDeleteThank YOU! Glad you liked it!
DeleteDo we cover with foil?
ReplyDeleteYes, a good covering of the yogurt mixture. Hope it worked out well for you!
ReplyDeleteGreat taste! I added thighs and they made it take on an almost entirely different flavor. Definitely will be making this again.
ReplyDeleteI doubled the recipe and added minced garlic. Delicious! I made it for the guys at work and they all loved it. There is some water/chicken juice around the cooked breasts but no biggie! Just pick up the piece of chicken and let it drop off for a sec. I bet it would be super good to put parmesan on the top after baking and broil for a second...thank you for the recipe!
ReplyDeleteTemperature 350 making it now
DeleteI think the question is so you bake covered with foil?
