Baked Greek Yogurt Chicken

I have been seeing similar recipes to this, everywhere on Pinterest. 

So I thought it was time to give it a try -- and "health it up" a bit.  Oh my -- amazingly delicious chicken! 

It was super-easy to prepare, and it came out perfectly!  Tons of delicious flavor in this chicken and the Parmesan cheese makes it amazing!  Loved it.

21 Day Fix - Baked Greek Yogurt Chicken

BAKED GREEK YOGURT CHICKEN

Ingredients:
  • 4 small chicken breasts (skinless and boneless)
  • 1 cup plain Greek yogurt
  • 1/2 cup Parmesan cheese
  • 1 tsp. dried parsley
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. red pepper flakes
  • Salt and pepper, to taste

Preheat oven to 350 degrees.

In a bowl, combine all ingredients except for the chicken breasts. 

Place the chicken in a baking dish, coated with nonstick cooking spray.  Using a kitchen brush (a spoon will work too), brush the Greek yogurt mixture over the chicken.

Bake for 25-30 minutes or until cooked through (depending on the thickness of your chicken breasts).

Enjoy!

  6. So good! I added fresh lemon juice from half a lemon. I also used 1/4 fresh parm & 1/4 grated parm cheese. I cut my chicken breasts in half because they were thick but it still took close to double the cooking time, an hour. I think covering it next time would help it cook faster.

  11. I doubled the recipe and added minced garlic. Delicious! I made it for the guys at work and they all loved it. There is some water/chicken juice around the cooked breasts but no biggie! Just pick up the piece of chicken and let it drop off for a sec. I bet it would be super good to put parmesan on the top after baking and broil for a second...thank you for the recipe!

  16. Haven't tried this yet-sounds yummy. Would it work with Fat-free or 2 percent Greek plain yogurt? Has anyone tried that yet?

  17. Very tasty! I cooked for 30 minutes covered with foil. The uncovered added more Parmesan cheese and broiled for 15 minutes I will make again!
